Kale. I think of it as the bacon of vegetables it is brimming with intensity.
This wonderful red Kale is from Lady Moon Farms in PA.
I always love the stuff I get from them at my local co-op.
First I got a big cast iron pan and cut up a few strips of bacon in it to cook up. We love Coleman brand Bacon as it is simply mavhhhhalous. If you are a bacon lover and only eat the cheap stuff, do yourself a favor and switch over. Think quality instead of quantity. About halfway through the bacon to be done I added 4 sliced garlic cloves and a half a large onion...you could use one small onion if you wish.
After the garlic and onions were cooked and browned I threw in rinsed, ripped section of the kale leaving out the hard stem at the bottom. I attempted to remove most of the bacon mixture on the bottom so that it didn't burn. I stirred occasionally until it reached my ideal of still having some bite to it.
We are avoiding many grains at the moment so topped it with some almond meal to soak up some of the juices and add some texture. I also like to put some sliver almonds on the top.

3-6 slices of bacon
1 small to medium size onion chopped
2-4 garlic cloves
one bunch kale
4 tablespoons almond meal
2 tablespoons slivered almonds
dash of salt
